Why do you want to change the size of the rear tyre?
Personally I would stick with what Mr. Kawasaki recommends. Don't forget they spent a lot of R&D on getting the thing right, and you may make the handling worse rather than better. I honestly don't think you'd get any tangible benefits from fitting a 180- there are plenty of good tyres around in 160 size if you're after grip etc. :D

Knowing that some of us like to change the tyre profile, to get the bike to lean more or turn quicker, I can't agree with Gazz.
As for what will fit, that's another thing, I've modded saveral bikes and putting fatter tyres on the rear was one I did regularely when I was a kid.
Know how fat your origional tyre is... U so that you can start there,
Then measure the gap between your tyre and your swinging arm.
Check if there is enough room if so it will fit.
180-width
55- profile
17- wheel diameter

I agree with Si about changing the profile and it turning quicker, but if you squeeze the larger tyre onto the rim you'll also end up with an even smaller contact patch on the rear when it's leaned over and you're giving it some, so be gentle with it and don't get bitten.. :D
